Using fish instead of mince provides a delicious alternative to standard tacos that the whole family will enjoy. Enjoy with this lovely mango salsa. Recipe courtesy of Toby Puttock & Australian mangoes.
Ingredients
600 grams Flathead fillets, fresh
1 lime juiced
1 tablespoon olive oil
1 small handful coriander leaves, washed, dried and roughly torn
1 teaspoon chilli pepper - fresh, green
1 pinch sea salt
For the mango salsa:
1 mango ripe, skin removed and roughly diced
2 teaspoons jalapeno chilli, chopped
1 handful coriander leaves, washed, dried and roughly chopped
2 tablespoons limes, juiced
Other:
2 handfuls iceberg lettuce, shredded
2 tomatoes washed & diced
8 corn tortilla

![]() Method 1. To marinade the fish combine the first 5 ingredients (not including the fish) in a mixing bowl, stir to combine and then add the fish into the marinade and allow to marinade for at least 20 minutes at room temperature. Once marinated grill the fish over a high heat on both sides, once cooked allow to rest for a moment and prepare the remainder of the ingredients.
