



Free Healthy Recipe - Apple Muffins
Low fat, Low GI, Low sugar, Wheat Free
Here's a nice lunchbox treat for your children. These are much better for you and your children than those made with white flour and packed with sugar.

Ingredients
3 cups wholemeal spelt flour
½ tsp allspice
1/3 cup raisins
1/3 cup honey
2 eggs
½ cup sheep's yoghurt
¼ cup sunflower oil
½ cup low fat milk
250 grams apples, peeled and sliced

Pre heat the oven to 200C. Grease a 12 cup muffin tray. Sift the flour into a bowl with the baking powder, all spice and raisins. In a separate bowl beat the honey with the eggs, yoghurt, oil and milk. Add the wet mixture to the dry and stir through gently. Fold in the apples. Note: If you do need to cut some corners, there's some value in using frozen apples available from the supermarket to make muffins. Packed fresh and frozen they retain the nutritional value of fresh. Makes 12 servings (serve = 1 muffin)
