



Free Healthy Recipe - Toddlers Mini Savoury Muffins
Low fat, Low GI, Low sugar
In these muffins there is no nutritional analysis provided. Kids meals should be planned more for their nutritional density and less about the energy density.
These easy to handle savoury muffins contain protein, fibre, calcium, carbohydrate, fat and numerous vitamins.

Ingredients
125 grams wholemeal self-raising flour
1 small tin red salmon, in spring water
1 small zucchini, grated
1 small sweet corn, steamed and kernels cut off
1 handful grated cheddar cheese
1/3 bunch chives, finely chopped
60 grams butter, melted
150 ml milk
1 egg
unsalted butter melted for brushing

Method
Preheat oven to 200C. Brush two 12-hole mini muffin tins with little melted butter. Sift flour into bowl and mix in salmon, zucchini, corn, cheese and chives. Stir to combine. In another bowl, mix the melted butter, milk and egg. Pour this mixture into the centre of the flour mixture and stir with a fork until just combined. Mixture should be still lumpy so don't over mix. Spoon mixture into muffin tins and bake for approx. 15-20 minutes until muffins are slightly golden. Cool on a wire rack. Freeze muffins and pull out as needed. No need to reheat. Just thaw and serve. Variations: The recipe can be made with any cooked meat, fish, as well as vegetable and herb of choice. Makes 24 servings
